This past weekend was Cinco de Mayo and my sister and I planned a delicious mexican dinner before our festivities on Saturday night.  You’d be surprised to know that you probably have all the ingredients on hand to make a fresh salsa.  After browsing a few recipes for a simple salsa and then just came up with my own combo below.

5 roma tomatoes – peeled, seeded, and chopped

1/2 medium onion- finely chopped

2-4 cloves of fresh garlic – minced (I like a lot of garlic, but adjust to your own taste!)

jalapeno- seeded and chopped

chopped fresh cilantro (to taste)

juice of a lime

juice of half a lemon

salt and pepper

After all of the prep work is done, combine in a bowl and refrigerate for a few hours to let the flavors combine.
